Which audio format will I get from my 3GP?

MP3 by default, because nothing refuses to play it. You can choose a different target: AAC for better quality at the same bitrate, FLAC or WAV when you need lossless, OGG or Opus for open formats and low-bitrate speech.
Copied when it can be. If the audio inside your 3GP is already in the target codec we pass the stream through untouched, which is instant and bit-perfect. Otherwise it is re-encoded once at a high bitrate.
192 kbps MP3 is transparent for most listeners on most material; 320 kbps is the practical ceiling for the format. For speech and podcasts, 96-128 kbps is plenty and halves the file. Going above the source bitrate never adds quality.

If the source carries several tracks — alternate languages, commentary — the primary one is extracted by default and you can select a different one. Most audio targets hold a single track, so they cannot all be kept in one file.

The source sample rate is preserved by default — 44.1 kHz and 48 kHz both pass through unchanged. Resampling is available but rarely useful, since it cannot recover detail that was never recorded.
Title, artist, album and embedded artwork are copied where both the source and the target support metadata. Some very simple audio containers have no tag mechanism at all, in which case the metadata is dropped.
Because 3GP is the cut-down MP4 profile built for early mobile networks, usually very low resolution with AMR audio — most of the original bytes were the parts you are discarding. Keeping only the audio track routinely produces a file a small fraction of the original size, and that is expected, not a sign of quality loss.
